Time goes faster\u2026 It seems only yesterday, we were celebrating the\u00a0Brewery\u2019s eight birthday<\/a>\u00a0,\u00a0hoping for one tiny ray of sunshine \u2013 luckily we had it! \u2013 and here we are in the\u00a0middle of July<\/strong>, sweating under the summer sunlight!<\/p>\n

So, it should be the right time to (re)introduce you our\u00a0monthly<\/strong>\u00a0Bizarre Beer<\/a>,\u00a0Duchessic<\/a>.<\/p>\n

Our (quite unusual)\u00a0\u00a0\u201ccollaboration beer\u201d<\/em>\u00a0with\u00a0Brasserie Cantillon<\/a>\u00a0is an interesting experiment about\u00a0spontaneous fermentations<\/strong>. Our traditional\u00a0Duchessa<\/a>\u00a0\u2013 spelt beer \u2013 has been cut with a\u00a020% of one year old lambic from Brasserie Cantillon<\/strong>.<\/p>\n

The result is a unique beer that extraordinarily merges\u00a0the lambic sharp and sour characteristics<\/strong>\u00a0with the\u00a0gentle notes of Duchessa<\/strong>.<\/p>\n

We know many of you love Duchessic and\u00a0can\u2019t wait to drink it<\/strong>\u00a0again \u2013 so do we!! \u2013 but\u2026\u00a0oops, we did it again!<\/strong>\u00a0And actually, it\u2019s not really our fault.<\/p>\n

Just like it already happened two years ago, this year\u00a0Duchessic<\/strong>\u00a0will be released with a\u00a0short delay<\/strong>\u00a0because the blend between\u00a0Duchessa and Lambic<\/strong>\u00a0hold a weird surpise (well, by now to us it\u2019s not such anymore, and it seems to be quite a common thing for the Belgian\u201dsour\u201d) :\u00a0an odd viscosity<\/strong>\u00a0and \u201cstickyness\u201d,<\/strong>\u00a0which originates from a peculiar evolution of Lambic.<\/p>\n

The \u201cfault\u201d is reversible, but we\u2019ll have to wait\u00a0a little bit longer<\/strong>.<\/p>\n

The good news\u00a0<\/strong>\u00a0is that usually this kind of phenomena gives to Lambic a very special \u2013 and extremely good \u2013 taste\u2026\u00a0so we can expect a \u201csuper duper\u201d Duchessic!<\/strong><\/p>\n
