In this case,\u00a0Vespa<\/strong>\u00a0is not the scooter, but the insect! Do you consider\u00a0waps and hornets<\/strong>\u00a0as annoying and useless creatures, whose only aim is ruining our summer barbeques? Well, this time you could change your mind. Beside being very important to the environment, just like the bees, we should also thank those insects for\u00a0preserving the wine (and beer)\u00a0 typicalness.<\/strong><\/p>\n

Actually, during the winter they store inside their bowels,\u00a0the yeasts that can produce wine, bread and beer fermentation.<\/strong>\u00a0This is the result of a scientific research undertaken by the\u00a0Edmund Mach Fundation of San Michele all\u2019Adige<\/a>\u00a0\u2013 including prof.\u00a0Duccio Cavalieri<\/strong>, that had already been a precious source for the\u00a0Etrusca\u00a0project –\u00a0\u00a0\u00a0Florence University\u00a0<\/strong>and the\u00a0Montpellier CNRS<\/strong>.<\/p>\n

Wasps and hornets\u00a0\u201charvest\u201d the yeast from the grape\u2019s skin<\/strong>\u00a0in the vineyards and they keep them inside their intestines for a certain period of their life cycle, only to \u201crelease\u201d them onto the fruit when they\u2019re ripe again, tasting delicious to them. Furthermore,\u00a0 those two species, differently from others, are\u00a0quite \u201cresidential<\/strong>\u201d and seem to be strictly related to specific areas. This makes thus possibile to identify a specific\u00a0microbiological diversity<\/strong>\u00a0belongin to a specific region or vineyard.<\/p>\n

Being a biologist himself, and deeply passionate for\u00a0local yeasts<\/a>,\u00a0\u00a0Leonardo<\/strong>\u00a0couldn\u2019t keep himself from experimenting this new discovery using\u00a0prof. Cavalieri\u2019s wasp yeasts<\/strong>\u00a0to make a peculiar beer, or we should say two! Both\u00a0Birreria<\/strong>\u00a0at\u00a0Eataly Roma<\/a>\u00a0and\u00a0Eataly New York<\/a>\u00a0were the \u201claboratories\u201d where the first steps of\u00a0\u201cVespa Project\u201d\u00a0<\/strong>took place.<\/p>\n

This is the code name we adopted for the experimental use of the wasp yeasts in small batches, to verify how\u00a0the different yeasts strains<\/strong>\u00a0behave in fermenting different worts. Each of the two beers that have been made up to now has\u00a0its own name, recipe and taste.<\/strong><\/p>\n

First beer we made was\u00a0Maia<\/strong>, that we called so because of the lovely cartoon\u00a0Maya the Bee<\/a>(actually bees do are nicer than wasps!). We brewed it in the mid of Fall at\u00a0Eataly Roma<\/strong>, when\u00a0Leonardo\u00a0<\/strong>and\u00a0Brooks Carretta<\/strong>\u00a0weere joined by\u00a0Teo Musso<\/strong>\u00a0and\u00a0Sam Calagione<\/strong>. Maia has been made using\u00a040% barley malt, 30% honey and 30% malvasia grape must<\/strong>\u00a0(the same we used for our\u00a0Caos<\/a>).<\/p>\n

\u201cThe result \u2013 Brooks says \u2013 is a beautiful golden beer, around 7% ABV, where the cereal, honey and wine aromas nicely melt together. The yeasts we used came from three strains that the researchers could select and extract from the wasps\u2019s bowels. Those yeasts, that were used for the first time ever in making beer, worked very well and gave the beer a nice dry character\u201d.<\/p>\n

In december we flew to\u00a0New York<\/strong>\u00a0to meet\u00a0Sam Calagione<\/strong>\u00a0and\u00a0Peter Hepp<\/strong>, the new\u00a0Eataly New York\u2019s\u00a0<\/strong>resident brewer<\/em>, to proceed with the project\u00a0 (and to do much more, but we\u2019ll tell you about that later) brewing\u00a0 the second beer, that will be probably called\u00a0\u00a0Calabrone<\/strong>\u00a0(the Italian word for\u00a0horne<\/em>t).<\/p>\n

This time the starting recipe was the same of\u00a0Nicoletta<\/strong>, one of the latest beer made at\u00a0Eataly NY\u00a0<\/strong>by Sam and Peter: they used\u00a0chestnut and wildflower honey,\u00a0 pinot noir must and Champagne yeasts<\/strong>, that in this case we replaced with the one coming from the wasps intestine.<\/p>\n
