Last week three of us \u2013\u00a0Andrea, David and Conor<\/strong>\u00a0\u2013 travelled to the US to visit our friends at\u00a0Dogfish Head<\/a>. Here you can find a short account about those intense and exciting days written by\u00a0Conor<\/strong>, our cellarman here at Birra del Borgo.<\/p>\n

Some days ago we went to visit our brothers in brewing arms on the other side of the Atlantic \u2013 the kind folks at Sam Calagione\u2019s famous\u00a0Dog Fish Head Brewery<\/strong>\u00a0in Delaware. We were accompanied on this arduous excursion by our native brewing friends of\u00a0Baladin<\/a>.<\/p>\n

It is futile to say that it was\u00a0an amazing experience<\/em>\u2026 how could it not have been? Travelling so far to visit\u00a0one of the most important and \u201coff-centred\u201d breweries in America,<\/strong>\u00a0possibly in this side of the Galaxy, for the second time in two years\u2026 well I don\u2019t have the words to describe what a wonderful trip it was.\u00a0The people we met,<\/strong>\u00a0their kindness and willingness to share their experiences and passion for one of the oldest and most imbibed beverages of this world reflected the same goals we have at\u00a0Birra del Borgo<\/strong>: to create and share\u00a0liquid euphoria<\/em><\/strong>.<\/p>\n

The trip was designed to share our like-minded attitudes towards beer making and the different paths available to get to\u00a0that final, beautiful, awe-inspiring pint of beer.<\/strong>\u00a0We had intensive sessions on\u00a0aging beer in wooden barrels<\/strong>\u00a0that we headed by presenting a\u00a0Birra del Borgo pilot experiment<\/strong>\u00a0carried out using oak-aged\u00a0Enkir<\/a>,\u00a0Reale Extra<\/a>\u00a0&\u00a033 Bruna<\/a>.<\/p>\n

We also had important discussions on\u00a0quality control<\/strong>\u00a0that were headed by\u00a0Rebecca Newman<\/strong>(DFH\u2019s quality manager) \u2013 a wonderful person, full of knowledge and experience and ready to share both, either in front of a blackboard or over an informal pint. We also had a\u00a0tasting panel of spiked beers<\/strong>\u00a0demonstrating the importance of fine-tuning one\u2019s senses in order to control and perfect the brewing process.<\/p>\n

What we couldn\u2019t miss was\u00a0a game of \u201cbocce\u201d<\/strong>\u00a0just outside the brewery but, even more exciting (because at least we won this one), was\u00a0playing soccer on the beach at Rehoboth<\/strong>\u00a0close to the Brewpub while a school of dolphins decided to give us a remarkable show by jumping in and out of the water only 15meters away from the shore! We also had\u00a0a very nice dinner<\/strong>\u00a0with the DFH staff and local craft beer supporters where Sam chose some of our beers and paired them with local cheeses and cured meats. Lastly, we were introduced to many people who gave us the great satisfaction of sharing their thoughts on our beers.<\/p>\n

Back to work where we split into groups with the heads of each department:\u00a0David,<\/strong>\u00a0our quality technician, spent most of his time harassing\u00a0Dog Fish Head\u2019s team of scientists<\/strong>!\u00a0Andrea<\/strong>, along with\u00a0Palli<\/strong>\u00a0(or Paolo, head brewer at Baladin), followed\u00a0Tim<\/strong>\u00a0(head brewer at DFH) and his team of brewers around the brew plant where the magic happens. I followed\u00a0Jeff & Jesse<\/strong>\u00a0(Packaging & Brewing supervisors) around the cellar, which was more like a never ending labyrinth of fermenters and tubes.<\/p>\n

Despite the fact that DFH\u2019s main brewery is huge, we saw there the same spirit and enthusiasm that we encountered in their relatively small, 5 hl brewpub:\u00a0a spirit you smell, breathe, hear and drink!<\/strong>\u00a0What I am trying to say is, like\u00a0Birra del Borgo<\/strong>\u00a0and\u00a0Baladin<\/strong>, Dog Fish Head are\u00a0emozionando la birra<\/em>\u00a0in the same way they used to in the beginning. They are just sharing these emotions with more people.<\/p>\n
