It has been the chance to trace back\u00a0<strong>Birra del Borgo\u2019s firts six years<\/strong>through some of our beers paired to the recipes especially created by\u00a0<strong>Gabriele Bonci<\/strong>\u00a0using the best local products selected by\u00a0<strong>Vincenzo Mancino<\/strong>\u00a0from\u00a0<a title=\"DOL\" href=\"http:\/\/www.dioriginelaziale.it\/\" target=\"_blank\" rel=\"noopener noreferrer\">Dol<\/a>, the greatest meat from\u00a0<a title=\"Ecofattorie\" href=\"http:\/\/www.ecofattorie.it\/\" target=\"_blank\" rel=\"noopener noreferrer\">Ecofattorie Sabine<\/a>\u00a0and the awesome vegetables from\u00a0<a title=\"Pomarius\" href=\"http:\/\/www.pomarius.it\/\" target=\"_blank\" rel=\"noopener noreferrer\">Pomarius<\/a>.<\/p>\n<p><span id=\"more-38\"><\/span>Here\u00a0<strong>Marco Valente<\/strong>, owner at Palestrina\u00a0<a title=\"Taberna\" href=\"http:\/\/taberna-palestrina.it\/\" target=\"_blank\" rel=\"noopener noreferrer\">Taberna<\/a>\u00a0(the first official Birra del Borgo venue, he knows us quite well!) tell us his impressions of the night, along with the beautyful images taken by\u00a0<strong>Marco Cenci<\/strong>: he was brave enough to remain sober all night long, as you can tell from his great pics!<strong>\u00a0Thanks to both of them!<\/strong><\/p>\n<p>\u201cWe will remember for a very long time the night that Slow Food held at Open Baladin in Rome to celebrate Leo and his Birra del Borgo.<\/p>\n<p>It has been a journey made of\u00a0<strong>stories, beers and terroir.<\/strong>\u00a0We have to thank\u00a0<strong>Gabriele Bonci<\/strong>\u2018s cooking skills, his \u201cpeasant dinner\u201d and the fantastic ingredients supplied by\u00a0<strong>Vincenzo Mancino<\/strong>from D.O.L.<\/p>\n<p>We started with a \u201cburger\u201d, a classic of Open style but with different ingredients:\u00a0<strong>mutton beef meatball, steamed spinach, pork\u2019s cheek lard cooked in Duchessa beer and pecorino cheese.<\/strong>\u00a0And let\u2019s not forget the\u00a0<strong>bread<\/strong>, made with spelt, natural yeast and honey. This was paired with\u00a0<a title=\"Enkir\" href=\"https:\/\/birradelborgo.it\/it\/birre\/scheda\/8\/enkir\">Enkir<\/a>, and it worked really well.<\/p>\n<p>Then we had the\u00a0<strong>sheep soup with chikpeas, chicory and pecorino cheese<\/strong>. Smooth, round, sharp at some point, just like the\u00a0<a title=\"HoppyCat\" href=\"https:\/\/birradelborgo.it\/it\/birre\/scheda\/19\/hoppy_cat\">Hoppycat<\/a>\u00a0we drank along. A perfect balance.<\/p>\n<p>Of course we could have never missed the\u00a0<a title=\"ReAle\" href=\"https:\/\/birradelborgo.it\/it\/birre\/scheda\/4\/reale\">ReAle<\/a>\u00a0as we were talking about Birra del Borgo\u2019s story, served with the\u00a0<strong>\u201cabbacchio brodettato\u201d<\/strong>\u00a0(suckling lamb cooked in broth). A real \u201cfarmer dish\u201d, balsamic, intriguing. It brings along old memories\u2026 as you taste the egg from Subiaco and a bunch of fresh mint.<\/p>\n<p>We ended the dinner with some\u00a0<strong>cheese pairing<\/strong>: the\u00a0<strong>caprino nobile<\/strong>\u00a0(matured moldy goat cheese) with the\u00a0<a title=\"Duchessic\" href=\"https:\/\/birradelborgo.it\/it\/birre\/scheda\/15\/duchessic\">Duchessic<\/a>, and the long matured<strong>\u00a0provolone di Formia<\/strong>\u00a0with\u00a0<a title=\"Equilibrista\" href=\"https:\/\/birradelborgo.it\/it\/birre\/scheda\/20\/equilibrista\">Equilibrista 2010<\/a>, a well assured pairing as we tasted it in different occasions.<\/p>\n<p>We said goodbye with a gorgeus\u00a0<a title=\"Sedicigradi\" href=\"https:\/\/birradelborgo.it\/it\/birre\/scheda\/12\/sedicigradi\">Sedicigradi<\/a>.<\/p>\n<p>I totally enjoyed the night. As I got back home I was thinking about\u00a0<strong>Leonardo<\/strong>, his braveness and his skill. And about how Birra del Borgo is by now part of Lazio\u2019s gastronomical heritage, as it certainly doesn\u2019t cut a poor figure also compared to long-time established farming or breeding activities. And I was also thinking about\u00a0<strong>Vincenzo Mancino<\/strong>\u2018s perseverance in sifting out the whole Lazio region searching for gastronomic excellence.
